The Taktouka is a salad which is usually made with tomatoes, grilled paprika, lettuce, onions, apples and olive oil. This salad dish is traditionally from the Moroccan Cuisine and there are various recipes for it as the ingredients may differ from one family’s recipe to another.
Taktouka can be described as a zesty puree which comprises of green pepper and tomatoes. The dish is similar to Shakshouka but the latter includes poached eggs. You can Taktouka as a dip. It is advisable to use fresh vegetables so as to make the salad aromatic and perfect.
You can enjoy this salad anytime of the year. Taktouka is usually served as a
cold or semi- warm dish. The dish pairs well with chermoula and tagine dishes. You can also enjoy it with any crusty Moroccan bread of your choice.
Taktouka is generally considered as a side dish. Always serve it alongside
Moroccan mint tea.
3 green peppers – roasted, seeded and roughly chopped
6 medium peeled tomatoes – seeded and finely chopped
3 tbsp chopped parsley
3 cloves garlic – properly chopped
3 tbsp chopped cilantro
1 tsp salt
1 tsp paprika
¼ tsp black pepper
2 tsp cumin
1/3 cup olive oil
Optional: ½ tsp cayenne pepper
How to Make It (Yield = 4 servings)
▪ Step 1 In a frying pan, take all the ingredients and turn the heat of the stove to medium-high flame. Cook while occasionally stirring for about 18-20 mins, or till tomatoes become very soft. If necessary, lower the heat to prevent the peppers and tomatoes from burning.
▪ Step 2 Use a spoon to smash the tomatoes when they are soft and then leave the mixture to cook for 10 mins more, or till the liquids are gone and all that’s left is oil. Now, cook until the salad has properly blended and you can stir them away from the pan’s sides.
▪ Step 3 Serve taktouka cold or warm alongside your favorite Moroccan crusty bread.
