Banana Nut Bread Oatmeal

Ingredients:

1 cup steel cut oats (do not use instant or quick-cooking oats)

3 cups nut milk (may also use regular milk or other non-dairy milk)

1-1/3 cups water

2 large, ripe bananas

1 tablespoon pure vanilla extract

2 teaspoons ground cinnamon

1/4 cup chopped raisins

1/4 cup finely chopped nuts (walnuts or pecans)

Grease the bottom and sides of your slow cooker with butter.

Combine all of the ingredients EXCEPT the raisins and nuts in a blender and
blend until nice and smooth. Transfer mixture into your prepared slow cooker and stir in the chopped raisins and nuts. Cook on “low” for 5-6 hours. You can cook this on “low” for up to 8 hours, but you’ll need to add in an extra 1/4-1/3 cup almond milk to prevent burning. Makes 4 servings.
